HEAD CHEF - Aaron Engeler
Chef Aaron Engeler was born in Sydney and then moved to Lithgow when he was young. After leaving school Aaron started his apprenticeship at the Workmen’s Club at the age of 15, then moved to complete his training at the Emirates- Wolgan Valley Resort and Spa. Aaron worked at a few restaurants in the Blue Mountains before moving down to Canberra where he worked in an upmarket restaurant and cafe.
Aaron then moved back to Lithgow to help open ESK restaurant.
He then took on the role of sous chef at the Fairmont resort and spa in Leura under Executive Chef John Slaughter. After a few months he was promoted to Executive Sous chef. During his time at the Fairmont, he competed in a culinary competition for La Chaine des Rotisseurs. He competed in Sydney to be able to then represent the state of NSW in Melbourne to which he won. This then took him to Taiwan to represent Australia against 22 other competitors from different countries. He undertook training for this at the Double Bay intercontinental. “It was one of the best experiences of my life, and I will never forget it. I met some amazing people”.
Over the past few years, he has been lucky enough to be nominated for – Accor kitchen talent of the year 2018 - finalist, TAA chef of the 2019 - finalist
HM Chef of the year 2019 – finalist, HM Chef of the year 2020 - Finalist
During his time at the Fairmont, he earned an opportunity to work with some amazing people for special events such as Colin Barker (boathouse on Blackwattle bay), Colin Fassnidge (previously 4fourteen) and Serge Dansereau (bathers pavilion).
